I feel like there are two types of Valentine’s nights. The go out, wait an hour for a table, wear uncomfortable shoes kind. And the stay home, dim the lights, blanket on the couch, dessert first kind. I am very much the second one. This drink was born on a night when I wanted something a little romantic but I also did not want to leave my house. I wanted a dessert, but I also wanted a drink. So I stood in my kitchen looking at white chocolate chips and raspberries and thought, well… we are about to experiment. The first sip surprised me. It was creamy, soft, and sweet without being heavy. It tastes like a bakery dessert but still feels like a proper cocktail. It is the kind of drink you make, sit down with, and actually relax for a minute instead of rushing around the kitchen. And honestly, it feels a little fancy even though it takes less effort than getting ready to go out.
