White Chocolate Raspberry Cream Martini (Valentine Cocktail)

I feel like there are two types of Valentine’s nights. The go out, wait an hour for a table, wear uncomfortable shoes kind. And the stay home, dim the lights, blanket on the couch, dessert first kind. I am very much the second one. This drink was born on a night when I wanted something a little romantic but I also did not want to leave my house. I wanted a dessert, but I also wanted a drink. So I stood in my kitchen looking at white chocolate chips and raspberries and thought, well… we are about to experiment. The first sip surprised me. It was creamy, soft, and sweet without being heavy. It tastes like a bakery dessert but still feels like a proper cocktail. It is the kind of drink you make, sit down with, and actually relax for a minute instead of rushing around the kitchen. And honestly, it feels a little fancy even though it takes less effort than getting ready to go out.

Ingredients (2 servings)

3 ounces vanilla vodka

2 ounces raspberry liqueur or raspberry syrup

3 ounces white chocolate liqueur

2 ounces heavy cream

1 tablespoon powdered sugar, optional for extra sweetness

Ice

 

Optional rim

Melted white chocolate

Pink or red sprinkles

 

Optional garnish

Fresh raspberries

 

Step 1: Prepare the Glass

If you want the decorated rim, dip the rim of the glass into melted white chocolate.

Immediately dip it into sprinkles and place the glasses in the refrigerator for a few minutes so the chocolate can set.

 

Step 2: Mix the Cocktail

Fill a cocktail shaker with ice.

Add the vanilla vodka, raspberry liqueur or syrup, white chocolate liqueur, heavy cream, and powdered sugar if using.

Shake for about 20 seconds. You want it very cold and slightly frothy.

Strain into chilled glasses.

No White Chocolate Liqueur

If you cannot find white chocolate liqueur, melt ¼ cup white chocolate chips with 2 tablespoons warm cream. Let it cool slightly, then add it to the shaker with the other ingredients.

 

Make Ahead

You can mix the alcohol and raspberry ahead of time and refrigerate. Add the cream and shake right before serving for the best texture.
