Strawberry Rose Lemonade Spritz (Valentine Mocktail)

There is a very specific moment every February where I decide my kitchen needs to feel like a romantic movie. I open the curtains even if it is cold, I put on music, and I start slicing strawberries like I am about to host the most put together brunch in the world. Meanwhile I am still in fuzzy socks and my sink is absolutely full of dishes. This drink came from one of those afternoons. I did not want something heavy. I did not want hot cocoa. I wanted something pretty. The kind of drink you hand someone and they smile before they even taste it. Something you could make for a friend, your kids, your mom, or honestly just yourself after a long day. The first time I poured it over ice and the strawberries floated to the top, I knew it was staying. It feels special, but it takes maybe five minutes, and that is my favorite kind of recipe. Sweet, lightly citrusy, a tiny bit floral, and bubbly. It tastes like Valentine’s without being overpowering.

Ingredients (2 servings)

1 cup fresh strawberries, hulled

2 teaspoons sugar

1 cup cold lemonade

1½ cups sparkling water or lemon seltzer

2 to 3 drops rose water, optional but recommended (Food Grade, Cortas Rose Water)

Ice

 

Optional garnish

Sliced strawberries

Lemon wheels

Sugared rim by dipping the glass in lemon juice then sugar

 

Step 1: Make the Strawberry Base

In a blender, blend the strawberries and sugar until smooth. If you want it extra smooth you can strain it, but I usually leave it. You have just made a quick strawberry puree and it already smells amazing.

 

Step 2: Build the Drink

Fill two glasses with ice. Pour about 3 tablespoons of strawberry puree into each glass. Add ½ cup lemonade to each glass. Add 1 to 2 drops rose water per glass. A little goes a long way. Stir gently.

 

Step 3: Add the Sparkle

Top each glass with sparkling water or lemon seltzer. Do not stir hard. Just a light swirl. The layers make it prettier. Garnish with sliced strawberries and a lemon wheel.

 

Tips

If you skip the rose water it is still delicious and becomes a strawberry lemonade spritz.

For a sweeter drink add a drizzle of honey or simple syrup.

For a party, mix the strawberry puree and lemonade ahead of time and add sparkling water right before serving.

 

Storage

The strawberry puree can be refrigerated for up to 2 days.

Once sparkling water is added, serve immediately so it stays fizzy.
