Mornings are messy, magical, and full of little moments that make a house feel like home. This is my favorite kind of breakfast, it's simple, homemade, and made with love before the day really begins.
There is a very specific kind of chaos that lives in my mornings. Little feet hitting the floor before the sun is fully up, someone asking for a snack when breakfast is already happening, and at least one child insisting they are starving even though they ate ten minutes ago. Mornings with kids are loud, messy, and full of motion, but they are also some of my favorite moments of the day.
This recipe came to me during one of those mornings when I wanted to slow things down just a bit. I needed something that felt homemade and comforting, but did not require me to stand over the stove flipping pancakes while refereeing sibling debates. I wanted breakfast to feel like a hug. Something warm, filling, and familiar that everyone would actually eat.
A breakfast casserole just made sense. It is forgiving, easy to prep, and perfect for feeding a house full of hungry kids without losing your mind. I can put it together while the coffee brews, slide it into the oven, and let the smell do the rest. By the time it is ready, the house feels calmer, bellies are full, and the day starts on a softer note.
This is the kind of breakfast I come back to again and again. It is simple, cozy, and made with love. Exactly what mornings with kids call for.
The Cozy Kitchen Casserole
Ingredients:
2 cups all-purpose flour
1 tbsp baking powder
1 tsp sugar
1 tsp salt
6 tbsp cold unsalted butter, grated or cubed
¾ cup cold buttermilk
1 lb breakfast sausage
6 large eggs
¾ cup whole milk or cream
1½ cups freshly shredded sharp cheddar cheese
½ tsp salt
¼ tsp black pepper
½ tsp garlic powder
½ tsp onion powder
Butter and honey for brushing
Optional: chopped green onions or parsley
Instructions:
1.) Preheat oven to 425°F. Grease a 9×13 baking dish with butter and set aside.
2.) In a bowl, whisk together flour, baking powder, sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Stir in buttermilk just until the dough comes together.
3.) Turn dough onto a floured surface, gently pat, fold once or twice, and cut into biscuits. Bake for 12–15 minutes until golden. Let cool slightly, then cut into quarters.
4.) Lower oven temperature to 375°F. Cook the sausage in a skillet over medium heat until browned. Drain excess grease.
5.) In a bowl, whisk eggs, milk, salt, pepper, garlic powder, and onion powder.
6.) Layer biscuit pieces evenly in the prepared dish. Sprinkle sausage over the top, then add cheese. Pour the egg mixture evenly over everything, pressing lightly if needed.
7.) Bake uncovered for 35–40 minutes until center is set and top is lightly golden.
8.) Mix melted butter and honey. Brush over hot casserole before serving. Let rest 5–10 minutes. Garnish if desired.
